A short kitchen knife with a wide blade and a blond boxwood handle. The wide blade lets you scoop chopped vegetables, herbs or garlic straight off the board. Handy for fruit, vegetables, cheese and smaller pieces of meat.
Pallares Solsona is a Spanish family business from Solsona in Catalonia that has been making knives since 1917. It is known for simple, sturdy knives with wooden handles, finished with a lot of handwork.
Boxwood is fine-grained, hard and light in colour, and feels smooth and warm in the hand. Wash the knife by hand and dry it straight away. A drop of oil on the wood keeps the handle looking good. The blade is stainless steel and is easy to hone with a whetstone or honing steel.
