A large kitchen knife with a wide blade and an olive wood handle. The lively grain of the olive wood gives each knife its own pattern and a slightly more robust look than the boxwood versions.
Pallarès Solsona has been making knives in Solsona, Catalonia, since 1917. The family business still works largely by hand, and the shapes have stayed the same for generations. Its length makes this knife suited to heavier cutting.
Use it to chop vegetables, finely cut herbs or carve a piece of meat. The wide blade also helps to slide everything into the pan. Wash the knife by hand and dry it immediately, as the dishwasher damages wood and steel. A little olive oil on the handle keeps the wood looking good.
